Organic Wednesdays at Green Butterfly 💚

At Green Butterfly we take pride in our handmade, organic, natural and ecofriendly lifestyle. At our store in North Dzorwulu,  Accra,  just behind the Fiesta Royale hotel,  one can choose from a variety of oils,  soaps, body butters, massage products, hair products and baby products.

We are blessed to have Roots and Soul Cafe come in once a week with great tasting vegetarian and vegan recipes. We also have some of our organic farmers come in with a variety of vegetables and fruits.

Going organic is the choice we need to make to improve our lives and well being. If you live in Accra you are invited to join us every Wednesday!

Coriander in a basket 

All we did was mix some black soil with our home made compost. We got some organic coriander seeds from our neighbouring farmer and here we are three weeks later!

Why go organic? 

It is a word you’ve probably been running into a lot lately but have you taken time to understand the reasons why we all need to live organic?  

Things we eat, use, and put on our bodies may or may not have toxic chemicals that end up in our bloodstream,  causing health problems and dysfunction. It is our responsibility to know what we are eating and what we are putting on the table for our families and children.

Cucumber and parsley salad in a yoghurt and garlic dressing


This light and refreshing cucumber and parsley salad is delicious and very healthy.

Diced cucumber
Fresh parsley
Fresh unsweetened yoghurt (also called Greek yoghurt)

I have a pre-made garlic paste (seen in the picture below) which I mixed with a little olive and coconut oil. I keep it in the fridge and use it in my salads and for cooking. Next to the garlic is the Greek yoghurt, and of course we have our cucumber and parsley.


Just throw the diced cucumber and parsley into a bowl and add the yoghurt, garlic paste and salt and that’s it!

Mint infused spicy “light soup” with yams

The soup base is made with onions, tomatoes, garlic, ginger and herbs. What you will need:

5 large tomatoes
4 large onions
Half a clove of garlic
A finger ‘ s measure of ginger
Seasoning of choice
Mint leaves
Bay leaves
Fresh hot peppers
Yam or potato

First boil the onions, tomatoes, garlic and ginger in water for about 15 to 20 minutes. Using a cooking spoon, remove the onions, garlic, pepper and tomatoes and blend together to form a paste. Ginger tends to be very hard so I prefer to leave it in the soup as it is.

Add the blended paste back into the pot and stir. Now you can add herbs and extra seasonings. Add some salt if needed and your cubed yam or potatoes and mushrooms and that’s it!  Want a slightly sweeter soup? Add some carrots and blend in! 🙂

Simple recipe: Oyster mushrooms in butter and garlic sauce.

If your mushrooms are dried you will need to soak them in water for at least 15 minutes. Soak them longer if you want them soft.


When the mushrooms become soft you can start. This dish is ready in under 5 minutes. If you want to have it with rice, pre cook the rice and then just throw this on top.

You will need:
Mushrooms (of your choice)
Ground black pepper / lemon pepper
Ground garlic (approx 4 cloves)
Salt and Seasoning

For one portion, melt a tablespoon or two of butter in a frying pan. Add garlic to the butter and then add onions.


Add mushrooms and any herbs and spices you wish to add. I added this great all round seasoning from Badia.



Throw in the mushrooms, add salt, pepper and seasonings and voila!


It tastes great and is super low in calories. Serve with pita bread, brown toast, or on a bed of rice.
