Cucumber and parsley salad in a yoghurt and garlic dressing

This light and refreshing cucumber and parsley salad is delicious and very healthy.

Ingredients:
Diced cucumber
Fresh parsley
Garlic
Salt
Fresh unsweetened yoghurt (also called Greek yoghurt)

I have a pre-made garlic paste (seen in the picture below) which I mixed with a little olive and coconut oil. I keep it in the fridge and use it in my salads and for cooking. Next to the garlic is the Greek yoghurt, and of course we have our cucumber and parsley.

Just throw the diced cucumber and parsley into a bowl and add the yoghurt, garlic paste and salt and that’s it!
